Is Apple Pay accepted pretty easily all over the parks? We are staying at swan/dolphin so adding a card to the magic band is not do-able.

Most if not all of the snack stands and restaurants accept it. I’ve used it every time and never had a problem except when the system was down but then they couldn’t run plastic cards either. I usually carry cash to use as a backup in case that happens.
 
I’m confused here as well. I added the mobile magic or whatever to my iWatch to work effectively as a magic band. When I open my iWatch wallet, the WDW 50th anniversary symbol is there. I click it and a QR code comes up. Does this QR code work universally for checking into G* and $ILL lines, as well as purchases as ir is linked to my AMEX?
 
If they have contactless/tap-to-pay credit card readers (everyone should have those by now) then Apple Pay, Samsung Pay, and Google Pay all work since they are all using the same technology. Think of them as just embedded EMV chips in your phone just like credit/debit cards have now.

But what about entry to G+ and $ILL lines? I’ve read that the iWatch could be used in lieu of magic bands for entry but haven’t read clearly how this works.

Not sure on this. We just used our plastic entry cards to tap into the LL and G+ lines.

For Park Entry, G+ and $ILL, you should only need to touch the Apple Watch to the reader. QR code shouldn't be necessary unless the touch point fails to read chip in your watch.

If you are staying at a Disney owned & operated resort, you can use the Disney MagicMobile Pass to charge purchases back to your room account.
If not staying on property, you can use Apple Pay on your Watch to charge purchases to any CC in your Apple Wallet.
