Appetizers and Pampered Chef Recipes

Since the search function is disabled I do not know if this has been asked before.

I am looking for Pampered Chep Appetizer recipes. Specifically the veggie pizza and the taco ring.

I am also interested in other appetizer recipes for our Superbowl gathering we are having on Sunday. Please no seafood appetizer recipes since DH and I do not eat this.

Currently I plan on making the 2 recipes requested above as well as: cheese ball, mini pig in the blankets and chili cheese dip. I am only serving appetizers since the game is at 6pm and I don't have time to prepare a meal this weekend.

Taco Ring

List of Ingredients


1/2 lb. cooked ground beef
1 pkg taco seasoning
1 cup shredded Cheddar cheese
2 Tbs water
2 8oz pkg crescent roll dough
1 med green pepper
1/2 head lettuce, shredded
1 med tomato, diced
1 small onion, diced
1/2 cup sliced black olives
1 cup salsa
Sour cream

Recipe


Heat oven to 375. Combine meat, taco mix, cheese, and water. Arrange crescent triangles in a circle with bases overlapping and points out on the 13" stone, leaving a 5" circle in center. Spoon meat on triangle bases. Fold points over meat and tuck under. Bake 20-25 min until brown. Cut off the top of the pepper (using PC V-shaped cutter). Fill pepper with salsa and place in center of ring. Mound lettuce, tomato, onions, and olives around pepper. Garnish with sour cream.

Serves 8.

Cool Veggie Pizza

1 pkg crescent rolls (8 oz)
1 pkg cream cheese, softened (8 oz)
1 Tbl mayonnaise
1 clove garlic, pressed
1 tsp dried dill weed
To taste Salt & Pepper
2 c assorted fresh veggies*

Preheat oven to 350. Unroll & separate crescent dough. On large round stone, arrange triangles in a circle with points in the center. Using lightly floured baker’s roller, roll out dough to a 12” circle, pressing seams together to seal. Bake 12 - 15 min until light golden brown. Remove & cool.
Combine cream cheese, mayo, garlic & dill weed.** Season with salt & pepper. Mix well & spread evenly over crust.
Sprinkle veggies over top of pizza.
Yield: 10 servings

* coarsely chopped - broccoli, cauliflower
diced or sliced - cucumber, bell pepper, tomato, green onion
slided - mushrooms
grated - carrot
crinkle cut - zucchini, summer squash

** all-purpose dill mix can be substituted for dill weed

How about some Chex Mix? That always goes over big here...or if you want something a little more substantial, how about "Hoagie Dip"? It's sort of like an exploded hoagie in a bowl that you eat on pieces of bread. If you're interested, let me know & I'll post the recipes.

How about something sweet? I found this recipe one day here on this board when my blood sugar was low. Sweet stuff always sounds better then! ;)

Chocolate chip cheese ball

8 oz cream cheese, softened
½ c butter (no substitute) softened
¼ tsp vanilla
¾ c confectioner's sugar
2 Tbl brown sugar
¾ c miniature semisweet chocolate chips
¾ c finely Chopped Pecans or tiny shaved chocolate
Graham Crackers

Beat cream cheese, butter & vanilla until fluffy. Gradually add sugars & beat until combined Stir in chocolate chips. Cover & refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball, cover and refrigerate for 1 hour. Just before serving, roll cheeseball into pecans. Serve with graham crackers.
 
Thanks for the recipes. I went to their site, but could not find the veggie pizza recipe....thanks a lot! The cheese ball sounds like something DH might eat.
 
I like to buy a bag of frozen meatballs and put them in the crockpot all day with grape jelly and chili sauce. I usually thaw the meatballs in the microwave first and melt the jelly and sauce together in a saucepan before adding it to the crockpot.
You could cook a pork roast all day in the crockpot until it falls apart and then put BBQ sauce in with it for BBQ's on a bun.

Apple salsa and cinnamon chips

Cinnamon Chips
4 (7 inch) flour tortillas
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon

Salsa
2 Medium granny smith apples
1 cup strawberries, sliced
1 kiwi, peeled and chopped
1 small orange
2 tablespoon packed brown sugar
2 tablespoon apple jelly

For cinn. chips - Preheat oven to 400 degrees F. Lightly spray tortillas with water. Combine sugar and cinnamon, cut tortilla into 8 wedges, place on single layer of pan. Bake 8-10 minutes or until lightly brown and crisp. Set on cooling rack.

For apple salsa - peel, core and slice apples, cut apples into quarters, chop with chopper (LOL, or whatever else you have - make it smallish/cubed).
Slice strawberries, chop kiwi (place all in small bowl).
Zest orange, juice orange. Add zest, orange juice, brown sugar and apple jelly to fruit mixture (mix gently). Spoon into bowl and serve.
 
Oh Michelle! That sounds sooooo good! We'll have to try that the next time we have Mexican.

I just wanted to say that we tried Michelle's recipe for the apple salsa last night. It was really good! However, as anyone who frequents this board probably knows, I never seem have the right ingredients & make substitutions. :rolleyes:

I just skipped the kiwi completely.
I didn't have any strawberries, but had a bag of frozen raspberries. I have to admit that I'm not sure I'd like it as much with the strawberries.
The raspberries added a tartness that I quite liked.
I didn't have any apple jelly, so I substituted orangle marmalade.
Then because I didn't need to mess around with the zest anyway & I was running out of time, I just used a can of mandarin oranges.

The quantity was quite depleted by the time I put it on the table. Everyone suddenly wanted to know if they could help me in the kitchen last night - as sneak a "taste!" ;)

I'm sure I'm the only one who would have done this, but I thought I'd point out that you should only spray one side of the tortillas before putting them on the tray. I thought I'd sprinkle both sides with the cinnamon sugar, so I sprayed both sides. I practically needed a hammer & chisel to get the chips off the non-stick pan. :eek: :rolleyes: Fortunately, I only did about half the chips the first time. The other half I put on a pizza pan I had - covered it with foil, sprayed it with the Misto & put the DRY tortillas on that. It worked out great!

I think another time, I will skip the brown sugar - it seemed sweet enough without it. Maybe because I used the mandarin oranges instead. Also, I think I'd like the chips to be a little sweeter, so I'll add more sugar to the cinnamon.
