Looks like you can get reservations at some places right now. Not seeing anything "signature" other than Wolfgang Puck but Boma, Boatwrights, Biergarten, Paddlefish, Trattoria Al Forno, Frontera Cocina and some others are available around 6 pm for 2 people.

I second the Flying Fish recommendation. Also, go on opentable - I see lots of availability for bluezoo and Il Mulino at Swan/Dolphin (both very nice) and Morimoto Asia in DS.

I'm looking now and Steakhouse 71 has an 8:05pm ressie.....I'm guessing that'll be gone quickly but still, things pop up as people get closer to their vacations so you might find a hard to come by just by checking at different times.
