How do you book restaurants at Resorts and parks, tickets & annual passes

It has been and while and I just purchased Grand Floridian villa and will be booking soon. When is the window to book restaurants and does Beaches at GF need to be booked. To book an in park restaurant do you need to have your tickets purchased? If you purchase the AP for Florida Residents can you convert to something else if they open up the AP that allows weekend visits??
 
Window for booking any dining with a resort reservation is 60 days out, and you can then make them for the entire length of your stay. Not sure what you mean by 'Beaches' at GF.... sorry. You should not need a park ticket to make a dining reservation, but will need one soon to make a park reservation to get into the park where you made the dining reservation.

I'm not sure anyone would guess at the answer to your final question - what happens with APs in the future is an unknown. You shouldn't plan on an AP that's anything more than the restricted one for FL residents.
