Eat at Home 3!

I haven't posted in a long time. Ever since I started going to Aldi I have done much better on our food expense.

This week will be:
Sunday--grilled burgers, potato salad, corn on the cob and coleslaw
Monday--Paula Deen's chicken casserole, coleslaw, maybe green beans
Tuesday--Pizza from Aldi, not great but not that bad either
Wednesday--chunky beef enchiladas, refried beans, salad
Thursday--lasagna, salad
Friday--Nachos

Now I have to figure out lunches to take this week too. Hopefully some will be leftover from dinner.
 
We are back from vacation so back to cooking well at least for 2 more weeks before our next vacation.
Sunday - Steak, salad, Italian bread, baked potatoes
Monday - 3 point chicken (WW recipe), leftover potatoes, stuffing, fruit
Tuesday - Lasagna, salad, garlic bread
Wednesday - Brats/Hot dogs, baked beans, fruit salad
Thursday - Pork Ribs, Rice
Friday - Pizza
Saturday - Hamburgers, pasta salad, watermelon, leftover baked beans.
 
Monday - beef enchiladas, rice, Mexican street corn
Tuesday - sirloin steaks, mashed potatoes, grilled eggplant
Wednesday - peach bbq grilled chicken, roasted potatoes, slaw
Thursday - grilled brats/hot dogs, orzo tomato salad, watermelon with balsamic glaze and feta
Friday - hummus crusted chicken baked with veggies, rice
Saturday - Texas Roadhouse
Sunday - spaghetti, garlic bread, salad
 
Oops forgot to post on Monday!

Monday: breaded baked tofu, mashed potatoes, roasted broccoli
Tuesday: black bean oat burgers on homemade buns, sweet potato wedges, green beans almondine
Wednesday: slow cooker veggie korma, quinoa
Thursday: nachos - blue corn chips, cashew queso, black beans, spiced walnut "meat", guacamole, salsa, pico de gallo
Friday: sweet potato and veg sausage hash, salad
Saturday: Vietnamese take out to take to 4th party
Sunday: dinner at in-laws

Next week, the kids are going to be at their grandparent's house all week long so food will be a little more low key just cooking for me and the hubs.

Monday: cheeseburger salad
Tuesday: lemon orzo soy curl soup for hubs, lentil soup for me
Wednesday: leftover soup
Thursday: BLTs
Friday: oven pancakes, chickpea sausage
Saturday: mac & cheese, chik nuggets, steamed broccoli
Sunday: roasted portobello mushrooms, mashed potatoes w/ red wine gravy, steamed broccoli
 
I haven't posted for a long time. I was in CA last week, but have been cooking since I've been home.
Tonight we had Italian sausages, stuffed pattypan squash, Caesar salad, and watermelon. Lunch was ham and cheese omelets and toast.
Tuesday dinner I had a spinach salad with berries and chicken. Boys had grilled chicken sandwiches. Lunch was Italian beef sandwiches, fruit and veg.
Monday dinner was grilled chicken, roasted veggies, berries. Lunch was sandwiches toasted in my sandwich maker.

Eating lunch with a friend tomorrow. Thursday dinner...chicken quesadillas, beans, chips, salsa.
Friday lunch, flatbread pizzas, salad. Friday dinner...something with sirloin or ground beef.
 
Glittercat- my recipe for the okra:

1lb okra cut up
1/2 Vidalia onion
3 slices bacon cut into small pieces
Garlic salt

Cook bacon and onion. Add in okra. Do not stir. Flip when bottom side is browned. Cook other side until browned and sprinkle with a bit of garlic salt before serving.

Sunday - grilled chicken salad
Monday - Ham, rice, green beans
Tuesday - pulled pork, baked beans, and squash
Wednesday - Mexican beef wraps, peppers and onions, corn
Thursday - grilled salmon, sweet potatoes, broccoli
Friday - grilled tilapia, roasted red potatoes, cucumber salad
 
This weeks meal plan:
Today: Hamburger, corn on the cob, and chips
Tomorrow: Peanut crusted mahi mahi, asian slaw, and green beans
Tuesday: Alfredo using both regular pasta and vegetable noodles
Wednesday: Leftovers
Thursday: Chicken sandwich with asian slaw and fruit
Friday: Leftovers
Saturday: Buffalo steak and baked potato

Now, the biggest change I am making is that except for the days I work, lunch is going to be my main meal. This is because I have much more energy to cook in the afternoon. By the time dinner comes around, I want nothing to do with cooking!
 
Monday - Sausage and peppers, eggplant parm
Tuesday - burgers, zucchini pie, homemade mac and cheese
Wednesday - Chicken Alfredo bake, salad
Thursday - Beef tips in red wine sauce, egg noodles, some kind of veggie
Friday - taco/nacho night with fixings and sides
Saturday - Chicken Caesar salads/sandwiches, pasta salad
Sunday - Cookout at my house- crabs, steaks on the grill, corn on the cob, potato salad and I'm sure much more, we always go overboard :)
 
I'd like to join in. I have an extremely picky eater, so I'll definitely be getting some ideas from previous threads. Tonight and tomorrow night are up in the air, so I'll be posting my plans later in the week

Tuesday: Leftovers or breakfast for dinner. I work that afternoon and have no idea when I will be getting home.

Thursday: Alfredo with regular and vegetable noodles with other vegetables (clear out any bits and pieces)
Friday: Hamburger steaks with onions and brown gravy, mashed potatoes, and green beans
Saturday: Homemade Ramen
Sunday: Leftovers

Friday - black bean burgers, sweet potato fries
 
Meal plan for this upcoming week! Going to start counting calories again starting Monday after stopping due to other medical reasons. Thinking I am going to have to buy a stool or something for my kitchen as I am dealing with some pretty serious back/hip/leg issues and standing to cook has been difficult.

Tonight: Not sure yet. Most likely an egg sandwich with ham and cheese.
Tomorrow: Fried rice
Monday: Homemade Ramen
Tuesday: Vegetarian 7 layer tostadas
Wednesday: Rosemary chicken with onions and mushrooms, mashed potatoes, and green beans

Half the week was/is planned:)...
Sun - Takeout pizza, sliced farm peaches
Mon - Oven baked Salmon, Mashed potatoes, Apple-Cinnamon Muffins, and Roasted Green Beans
Tues - Clean out the fridge soup (creamy potato base with kale, carrots, carrot tops, celery, onion, garlic, cappocolo ham, blue cheese) with hot dogs and strawberries and last of muffins (for those who don't eat the soup)
Wed - Chipotle Chicken soft tacos, sliced nectarines, chips and queso (with chips used as extra "shells" if we run out)
Thurs - Italian panned grilled chicken breast, Tomato-Mozza-Basil salad, blueberries
Friday - ?? (Leftovers if we have them - if not, I gotta think on this one:)
Sat - Late afternoon birthday party with pizza and cupcakes at a waterpark - kids will eat there, so grownups will likely do lunchmeat sandwiches, chips, and fruit when we get home (kids who are still hungry will pick at any of this), unless we splurge on takeout Chinese for the grown-ups (much cheaper when I only have to buy for 2:)...
 
I have not posted here in a very long time we have had so much happen that now more than ever we are eating in. And it's not a choice we are in the process of buying a house and it's very stressful here no vacations in our near future must make the best of it.
So this is what we have been eating
Sunday was stuffed chicken Parmesan shells very yummy
Monday was Freddy's cheese burgers with fries
Tonight was spaghetti with sauce and cheesy bread sticks ( they tasted like the ones from papa Gino's )
Tomorrow is a whole roasted chicken with rice and fresh summer squash with a strawberry pretzel dessert
Thursday will be French bread pizzas
Friday spinach and artichoke penne
Saturday turkey breast in slow cooker
Sunday will be oven ranch chicken
Monday glazed pork chops
Tuesday easy mac and cheese
 
Menu Plan for Week of July 25th

Saturday - Tilapia piccata over rice / okra
Sunday - hamburgers, hot dogs, tomato and avocado slices, pasta salad, corn on the cob
Monday - tacos and Spanish rice
Tuesday - sausage with red beans and rice
Wednesday - beef stew over garlic mashed potatoes
Thursday - carbonara with seared scallops / asparagus
Friday - grilled chicken, eggplant parm
 
Still cooking, but not posting! Started Weight Watchers 7 weeks ago. Down 15.5 pounds! I have 72 more to lose, but it's a start! We've been eating loads of fruit and vegetables. Yum! Luckily my two oldest sons work at a produce stand, and we get 1/2 off. That lasts a few more weeks.

Sunday was grilled chicken teriyaki , edamame, and egg rolls.
Monday was roasted chicken, broccoli, berries
Tuesday was pork tenderloin , sweet potatoes, and green beans

Tonight will be fish tacos, canned ranch beans, roasted califlower
Friday night we will have grilled chicken , and....whatever veg needs to be eaten, probably zucchini
