I don't think they will ever split a party of 2 or 3, and I would expect that splitting a party of 4 would be very rare. But the statement about splitting you up, spelling error and all, might be included on all reservations made on short notice.

Tips for scoring a VERY early res?

I'm on the West Coast and don't have internet at home (weird, I know...but hey, I'd be online all the time and forget to cook/clean...JK). Anyone have tips for when my 180 day point comes to make an early res at CP?

My understanding is when it's 180 days from the first day of your trip you can make ADR's - not only for that day but the 10 days following...? Is that right? We plan to have our first day on a Tuesday and go to MK on a Friday (depending on EMH days). Did anyone have a hard time getting an 8:05, 8:10, etc. (early!) res at CP? Is there anything special I need to do or am I overthinking this...should I just relax...use the phone and call to make the reservations?

You should have no problem getting an early ADR - I booked my current trip about 120 days out and had no problem getting an 8:10 CP reservation.

You are correct about the 180+10. 180 days out from your resort check-in date you may call for your ADR's for that day, plus the next 10 days.
