Our First Trip!

Hello! I figured after reading quite a few trip reports, I should give this a go and do a pre trip report as a way of keeping everything in one place, getting myself even more excited (if that is even possible LOL) and to get advice as I try to learn the ins and outs of a WDW vacation!

I'll keep a list to the links in this entry and update it as I go! Thanks for tuning in! <3

Meet the Cast

Okay so let's introduce everyone, shall we?

I'm Jessica, 27 years old, SAHM/Student. September 12th 2012 my life changed when I was diagnosed with Celiac disease with over 10 years of being misdiagnosed. Definitely a blessing to finally know what was wrong with me, but it's been a struggle learning to live in a completely different way! (For those who don't know, Celiac is an autoimmune disease and I cannot have gluten.) I also have a lactose intolerance and it now seems an issue with soy. Otherwise I love to read, write, travel and do daytripcations, bake, sew, crochet, needle felt and cross-stitching. Most of all I love being with my family.

My husband is turning 29 in 2 weeks. He works with mentally and physically disabled criminals and is a student as well. In his spare time he loves to pretend he is Alton Brown while he cooks an amazing steak, play the drums, play a video game or two or just snuggle up with the family and watch a movie. He is on a no salt and no saturated fats diet. Aren't we a fun pair with our eating restrictions? LOL.

Our son is 6 years old and is in the 1st grade. He is a Pokemon fanatic and is beginning to love Star Wars, Lego's and of course he has been a Disney fanatic since he was a baby. If he isn't reading, being a super hero, building an extremely tall tower or dancing? He's probably playing his DS and catching a lot of pokemon.


Possible cast members:

MIL & FIL: There is a 90% chance they are coming along with us on our trip! They're actually really great in laws and I love them to pieces!

Mom & sister: There is a 10% chance they are coming with us as well.

I should probably go bring the links up to date in my thread; I'm a slacker.

I was just thinking adjusting to celiac disease would be a bear, and then you add in the soy and lactose intolerance, and say your husband needs to be low salt and no saturated fats as well, ouch! My second son was recently diagnosed with high blood pressure (he's 16 -- high blood pressure runs in hubby's family ). He's doing a lot better at the exercising than I am at keeping to the low salt, no saturated fats thing. *sigh* Eldest son is diabetic, but he does most of his own adjusting.

Just found an oil-based sugar cookie recipe that everyone likes, so that's something. The no saturated fats diet (or at least our version of it) is how we all feel best eating anyhow; I shudder at the thought of trying to eliminate wheat, rye and barley for anyone in this family. Although I understand there's a lot more gluten-free prepared food than there was even a few years ago -- WDW TS restaurants know how to cope with it, and now there's even a Babycakes cupcake place in Downtown Disney, so that's definitely progress.
