CRT booking then adding dining plan
Currently I do not have the dining plan. If I book CRT(and prepay) then in say a month I add the dining plan can I get charges reversed and the reservation showing dining plan? Or do I lose reservation and need a new one?

You can wait until you get to the restaurant and they will credit your credit card and use your dining credits.
You can also call to have it done, but... there have been infrequent reports that the phone CM cancelled the reservation in order to rebook with the DDP, and the reservation was lost in that short period of time. I have been in this situation before and I have waited until we got there to take care of it, just to be on the safe side. |

We also had them credit our card when we showed up for our meal. I was nervous because the card that we booked with had gotten stolen so we'd been issued a new card in the 6 month period between booking and actually eating. Disney was able to credit our new card even though it wasn't the one charged. I don't remember actually handing the new card over to them, so CRT must be linked into the resort system somehow, because they were able to process the credit with just our room key. Whatever, we got our money back and were able to use dining credits instead, so I'm not complaining.

The simplest way is to wait until you are at CRT and let your server know you want to use dining credits instead. The server will credit back your card. This is what we did in October and since all the info was already in their system we didn't even have to present the card. Our credit showed up on our account within a few days.
If you want the money back as soon as you add the dining plan you will have to call the dining line. Be very clear with the CM that you want to modify the payment method and that you do not want to cancel the res. Many CMs will want to cancel the res because it is the easiest way to credit back the money, but in the time between canceling the res and making a new one someone else could swoop in and get the res. Then you would be without a reservation. If the CM wants to cancel/re-book the res ask for a supervisor or hang up and call again to get a different CM.
