I made our go to weekend food Arroz con Pollo http://tinkmomfoodie-foodobsession.b...rroz+con+pollo

I purchased some chicken quarters a few weeks ago and divided them into four portions and then broke down the quarters before I make the dish. Rice I buy in 20 lb bags and it lasts us for months. The rest of the ingredients I always have on hand like tomato paste and chicken stock. I pretty much have had no shopping budget the last few weeks with missing work (the Christmas vacation) and being in the hospital. I do have a stocked pantry which has gotten us through. I have discovered what was actually in the back of my freezer

I start school this next week. Some good news: I got my internship! I start at a local hospital the third week of February! I hope to be working as a Phlebotomist by Summer

Phlebotomist! Interesting because I am job hunting and always see jobs for this. Can you describe the school portion? How long will you have to attend?
My degree in finance isn't helping me find a local job. But if I could take a phlebotomy course I would be in business.

On food

I have been making tons of take along freezer snacks an lunches. Yesterday I made sausage cheese bisquik biscuits( they freeze well) and homemade pizza lunchables. Dinner was pork chops ric and corn.

Tonight will be chicken cutlets probably some kind of rice again( I buy the giant bag too!)

Monday will be maybe breakfast for dinner.

Hope everyone starts having better luck!

I stuck to my plan last week!

Here goes this week's.

Sunday - London broil with mushrooms, zucchini, squash, corn on the cob, french fries, italian bread

Monday - Leftovers or something from the freezer

Tuesday - Pork chops, hashbrown casserole, mixed veggies

Wednesday - BBQ baked chicken, mac and cheese, broccoli

Thursday - Leftovers or frozen pizza

Friday - pasta, garlic toast or beef stir fry (have both, will decide on friday)

Saturday - Eat out

I keep it very simple. When I make my gravy from the pot roast drippings I put 1/2 of it back to use in my pie. I chop up leftover roast and veggies and also use any veggies I have hanging out my fridge that are left over. I mix them together with the gravy. I take mashed potatoes (normally I make extra earlier in the week and put them in fridge) and mix in a little garlic powder. I spray a baking dish and put in the roast/veggie/gravy mix and spread the potatoes over the top. I brush the top of the potatoes with olive oil and then dot with a few pea size pieces of butter. Into the oven at 350 for 40-50 minutes and that is it. I also sometimes make it in the morning and stick it in the fridge. When DH get's home he sticks it in the over and dinner is ready in a short time.

Hi,

The Phlebotomy program at MATC (a technical college) is a year program. I transferred some credits from the first time I went to college 20 years ago and also went part time. It's an 18 credit program. I have also been taking the pre-req classes for Nursing which will be a 2 year program once I get into it.

We got to do live draws on each other last semester and I had to take a hospital computing class which was very easy. It's mainly a lot of memorization.

This semester I only need to do the Phlebotomy internship and take a test in order to get my certificate. I will be working in a busy hospital for 3 weeks in Feb. from 7AM-3:30 and I have to complete a hundred draws. However, I am taking a total of 10 credits. I have two online courses and two on campus courses along with the internship.

I can then work in any hospital or clinic or go on for national certification and earn more money. Right now it's paying from $14-17/hr.

Sunday is "Special Breakfast Day" for us. It's a day we are usually all home to eat breakfast together. My oldest ruined it by not getting out of bed lol I made this recipe from Allrecipes for a baked omelet roll. http://tinkmomfoodie-foodobsession.b...l-special.html

Well happy monday - co worker is on vacation and I am super busy today but using my lunch break here!

this week the plan is just for me and the Hubs..

Tonight - Chicken cordon bleu bake and green beans..
Tuesday - Barber Apple & Brie chicken, leftover rice and green beans
Wednesday - Shake N Bake boneless pork chops, egg noodles and green beans
Thursday - Omaha Steaks & Potato puffs and salad
Fri & Sat - at my parents..

This week -

Sunday - We had Fried Chicken, mashed potatoes and rolls. $10
Monday - Beef pasta $4
Tuesday - Teriyaki Pork Tenderloin, Rice. $7
Wednesday - Philly Steak Sloppy Joes, Chips. $8
Thursday - Cheese Manacotti. $6
Friday - Eat out, using a $25 gc we have to a local BBQ place. $10 OOP?
Saturday - ? (Not sure yet. I need to make another grocery trip this week.) $10?

My cost of dinners for this week = Approx. $55.

I am roasting a chicken for dinner. It's taking forever And I am roasting some potatoes along with it. This morning I made French Toast for breakfast and then we all went to the museum. Today is free day and we all had off
