I had a package of beef strips in my freezer that you could use for a stir fry or fajitas. However whenever I try that...the meat is always tough. So today....I threw it in my crock pot with a good bit of sliced onions. I added several kinds of spices including ginger, garlic, pepper, some cayenne and brown sugar. I cooked it on high for an hour then on low for another hour or so. Then kept it on warm. I made some steamed broccoli and rice and had basically a stir fry...IT WAS YUMMY.

Pear Gorgonzola Salad - I just kinda use the amounts I like - this is a mash up of 3-4 online recipes done my way (and made with what I have and what's on sale

1-2 Fresh Pears sliced thin (any kind)
1 Bag of Salad Mix (pick your favorite - arugula, romaine, spinach, iceberg
3-4 TB gorgonzola or blue cheese (or as much as you like)
3-4 TB glazed pecans (or as much as you like)
Prebottled champagne vinaigrette

I usually put down the greens on each plate, lay the pears on top, sprinkle with pecans and cheese and drizzle dressing...and done

Well, we can't seem to win around here. Mom had a small stroke and has been in the hospital for a few days. She is home now and feeling well. My grandma came down to stay for awhile to help out since classes are starting this week as well. So it will be insane for a bit!

Our menu starting tomorrow:

Sunday: Pot Roast with Potatoes, Carrots, and Onions
Monday: Roman Chicken, Green Beans, and Italian Bread
Tuesday: Tomato Soup and Grilled Cheese
Wednesday: Tuna Noodle Casserole
Thursday: Pork Tenderloin, Mashed Potatoes, and Glazed Carrots
Friday: Chicken Meatballs and Vegetable Fried Rice
Saturday: Grainy Mustard Chicken Thighs, Potatoes, and Green Beans
Sunday: Salmon Fillets, Rice, and Asparagus
