So far in the last few days I made scallopped potatoes with ham, crock pot sloppy joes, blue cheese stuffed chicken breast, stuffed mushrooms, and today Chicken en Mole'. I will post the recipe for that one ASAP but the sloppy joe one is on there.

Time for the Sunday night weekly menu. We're eating much healthier so I am going to need some new recipes soon. We're getting mighty tired of salads and our usual veggies so I need to keep this exciting. If anyone has any ideas I am all ears

Monday.. Grilled Chicken Burgers, Carrots and dip and cucumber.

Tuesday.. Butternut Squash Soup and turkey sandwiches

Wednesday.. Chili, whole grain rolls and salad

Thursday... Whole grain pasta, meat sauce, broccoli

Friday .. likely Subway, it's a busy busy day and I won't want to cook and the boys have to go out for the evening.

Saturday, French dip sandwiches and asparagus. Going to look for a healthier version of my usual recipe.

Sunday is usually grocery day and dinner at my parents.

My menu starting 1/14 and ending 2/2. I do have pneumonia (2nd time since December) so I didn't do as well as normal at grocery. I will do better next time.

Monday - Sloppy Joes (made with 1/2 ground chicken, 1/2 ground beef), slaw and over roasted potatoes.
Tuesday - still feeling awful, left over sloppy joes and chicken soup our of freezer for e.
Wednesday (hopefully I will be feeling better)– making it easy on me, salad and pizza (frozen that we had a coupon for)
Thursday – Part Deux night - pork fried rice with ham I had left in the freezer from the holiday (this should finish up the ham from that I still have another one in there I got 75% off after Christmas) and pot stickers
Friday –– Baked Fish with Couscous and Italian Style Veggies
Saturday –use a gift card we got for Christmas to eat out
Sunday – Chicken and Dumplings (made healthier using chicken breast and GF dumplings) with carrots
Monday – Pot roast with potatoes and carrots in the slow cooker
Tuesday –- Part Deux – shepherds pies using left over pot roast
Wednesday –pasta with chicken and veggies
Thursday – home made pizza with salad
Friday – Chicken Soup with grilled 3-cheese sandwiches
Saturday – breakfast for dinner, GF waffles with home made turkey sausage, cut up fruit
Sunday – baked fish, veggie couscous, peas/carrots
Monday - Chicken and dumplings with carrots, celery, and peas
Tuesday - tuna croquettes with jasmine rice and veggies
Wednesday -Make your own salad bar with grilled chicken, cheese, dried fruit, wonton noodles, cut up veggies and choice of dressings.
Thursday - Part Deux - stir fry using leftover chicken, veggies and rice form Tuesday and Wednesday
Friday - Nachos using chili I have it the freezer.
Saturday - DS's 25th birthday, this will be his choice. He will let me know a few days before. I would assume steaks with baked potatoes and a veggie.

Can you post recipe for the shepherd's pie using the leftover pot roast?
Thanks!

It was a super busy weekend around here. A good family member who was like another Grandfather to me passed away, and I volunteered to take my cousin back to college yesterday.

Friday night we ended up going out after the wake
Saturday we had london broil with hash browns, carrots, and fruit
Sunday I picked up a roasted chicken and sides at the grocery
Tonight we had lasagna with salad

I made a nice apple strudel for tonight.
The plans changed:

Mon.- Chicken fajitas w/ lettuce and tomato
Tue. - Rosemary roasted pork chops with potatoes (McCormick Seasoning packet)
Wed.- Chili as above
Thurs.- Maybe the pork tenderloin. I put it in the freezer. The chicken fajitas were a big hit. Everyone requested it for another night.
Fri.- Probably the southwest chicken flatbread
