Fudge Recipes?

Hi everyone,
Does anyone have any great/easy recipes for fudge (chocolate, vanilla or peanut butter)? I would love to make this for some of my co-workers for the holidays, but I don't want to be stirring a pot of fudge all day at the stove.
Thanks,
Jenny

Bailey's Irish Cream Fudge

I make this every year & if I don't my friends & family ask why not!
This makes a huge pan.

BAILEY'S IRISH CREAM FUDGE

4 & 1/2 cups Sugar
1 (12oz) can Evaporated Milk
1/2 pound Butter
2 (12oz) packages Milk Chocolate Chips
1 (12oz) package Semi Sweet Chocolate Chips
2 (7oz) jars Marshmellow Creme
2 teaspoons Vanilla
2/3 cup Bailey's Irish Cream
2 cups chopped Nuts

Follow directions EXACTLY!

Set all chocolate chips, marshmellow creme, vanilla, Bailey's & nuts in a very large bowl. Set aside for later.
Bring butter, sugar & milk to a boil & then cook slowly for exactly 11 minutes, stirring constantly.
Pour milk mixture over the other ingredients & stir slowly to blend. Do not use a mixer.
Pour into a buttered 10 x 15 inch pan & chill very well.
Cut & enjoy!

1 pound chocolate melting wafers
1 pound white chocolate melting wafers
1 pound Sam's Club creamy peanut butter

Place in microwave safe bowl and microwave on high for three minutes. Stir well. Pour into 9 x 13 cake pan that has been buttered.

I buy the chocolate wafers at the local craft store. You must use cheap peanut butter - it does not work using name brand peanut butter.

Question

I have a question about the recipes posted. "Do you need to store the fudge in the fridge, or can they be kept in a covered container at room temperature?"

I have a recipe for pumpkin fudge that I will have to post later.

Another recipe that I have tried from the DIS was a container of frosting and a regular size jar of peanut butter, melted in the microwave for something like a minute. Just until you can blend it good. Put in greased 8X8. It is very easy and very good. We like the fudge chocolate frosting.

I am sorry that I can't give credit to the person that posted the recipe.

I don't store mine in the fridge. I should. If I did, I wouldn't gobble it up so fast. Outta sight, outta mind.

Nah, that doesn't work. I keep it in the freezer and have been known to eat it frozen
