Calling all cooks! Need a great stuffing recipe!

So this year for Thanksgiving, SIL decided to "coordinate" our family meal - I got stuck with the ONLY thing on the list that requires legitimate cooking.

I am in charge of making stuffing and gravy.

While I consider myself a relatively good cook, I have no idea what I'm doing here. I don't normally prepare items like this.

Any ideas? I'll be serving 10 people, possibly 11.

I had a recipe from pioneer woman (which I've since lost, of course ) but if you google it then it should come up I think there was also a video on the Busy Cooks website

Whenh I make gravy I use the pan juices once the bird is cooked, so if someone else is cooking the turkey I'm not sure how you would make it in advance I deglaze the pan with a little water or stock, stir in a couple of T of flour until smooth then add more stock or water form the veg and whisk together over the heat until its smooth and thickened - but American gravy might be different.

I've never made homemade stuffing, don't care for it....
my DM makes it though, I think she uses sausage/celery in it, I could get her recipe later today and post it if your interested. everyone say's they love it.

DRESSING

5 loves --fresh---bread torn or cut into pieces

Brown 1 LB sausage (I use hot Bob Evans) but you know what your family likes
as it browns mash into small pieces

1 medium onion chopped
5 stalks of celery chopped small
3 fresh whole eggs
1 teaspoon full of sage (more if you like not to much or will turn dressing green)
1 stick or half cup of margarine (melted) do not add on top of eggs as will cook them

To Assemble: in a large mixing bowl or roaster put all bread/onions/celery/sausage/sage/margarine and 2 large boxes of chicken fat free broth this will make this all "soupy" then add the eggs and cover the whole top with regular ground black pepper and mix very very well----if it starts to firm as it soaks into the bread add more broth (sometimes I use 4 chicken bouillon cubes in 2 cups of water and disolve (you can also use more chicken broth) you want this bread meat mixture to be soupy...again I use black pepper over the whole top and mix very very well.....pour into buttered or PAM lined pans and bake for 45 minutes at 375 or stuff some in the turkey.

If you want Oyster dressing take out a pan full and add 1 small can of Oysters to that and bake the same

Our family likes the bite so I pepper four times and mix but that is up to you.

GRAVY-----need pan drippings/flour and a whisk use a sauce pan and start with heat low add drippings from the turkey and then your flour to make a loose paste using the whisk will keep all lumps out. add water to this and turn heat up as you whisk and the mixture will start to thicken like gravy.

IF you have on hand the water from cooking potatoes for mashing is excellent to use in this gravy and then thin it with plain water if need to

here's my mom's recipe

1 pound hamburger
1/2 pound sausage (or you can do one or change up the amount for more or less of which meat you like best)
large onion diced
2 1/2 cups celery cut up
2 packages of any type of dry stuffing w/seasoning
chicken broth in a box


saute onions and celery together until soft
fry meats together, drain well
mix them together in large bowl
add the stuffing mix and seasoning, add broth until you are happy with the mositure level
add additional sage if you think it needs it

put all in a casserole, bake at 350 for 1 hour or until hot throughout

this will make enough for 10-12 people

Since you won't be cooking the turkey to get pan drippingd for gravy- I suggest buying enough bottles of gravy- I find them come out better than the packets- all you have to do is take the lid off and microwave them for 30 sec to heat.

As gravy made with the drippings is best I'm still slightly confused why it was allocated to you Could the person who's cooking the turkey do the gravy and you make one of their sides instead?

That's just it... they're not cooking it - they're buying a prepared turkey. My MIL doesn't cook!
