Well, I've survived two unknown recipes and learned a couple of things.
I really need a new baking thermometer I am not a baker I don't like dealing with yeast, and "rising" things. But the results were worth it. I could become addicted to sweet lemon fritters, if.I.didn't.have.to.make.them. lol! AK update tomorrow as Steven sits next to me in his AK necklace!!!!!!!!!!!

Where's the bus? There is a bus, right? There will be a bus, right?
Our final day dawned lovely. Off to Animal Kingdom! We did some morning packing, not wanting to have to do everything at night when we got back as our flight was hideously early the next day. Semi organized we headed for our stroll up to the outpost bus stop.
And waited. And waited. And waited. ![]() ![]() ![]() ![]() Instead of "are we there yet", we got "is it here yet?" We must have seen, I kid you not, 6 buses for DTD, Epcot and DHS. Nary a one for AK. The bus stop was actually semi full with people waiting for the AK bus, either headed to AK or Blizzard Beach. Families took turns asking other buses where our bus was. No one could say, other than to say it was coming. No one changed their route to AK even though several buses had no one to pick up when they stopped, as a like bus had just left. 40 minutes later, perhaps more, the bus arrived. And went to Blizzard Beach first. A full hour after we'd gotten to the bus stop, we arrived. We'd planned to get fastpasses to EE and then do some rides but the journey had taken so long, the crew needed sustenance. Idea's of Flame Tree barbeque were SHOT down in flames....we'd had BBQ last night I was informed. So it became "what do we see after we get the FP's?" Fast passes in hand we then headed towards Kali so we could see what the wait was. Near to Kali, (90 minutes wait) was... Yak and Yeti Local foods cafe! The place (and park) was PACKED. We sent Steven to snag a seat and stood in line. And stood and stood and stood. The lines were pretty long and did not move quickly. Finally it was our turn and after inquiring about whether the kids would have to stick to the kids meals (no, they could order whatever they wanted) and whether or not we could trade sides for desserts (no which bummed us out, Scrooge and I were eying the egg rolls but consoled ourselves with the fact that they were clearly marked as a snack credit so planned to come back later and get some) we ordered the following: Scrooge: Sweet and Sour Pork Wall-E and myself: Shrimp Lo Mein Tink: Honey Chicken Steven: Mandarin Chicken Salad Goofy went for the Pork Egg Roll Kids meal and got it with french fries (a scary combo if you ask me) For dessert we had Chocolate Chip Cookies, Mango Pie and a Chocolate Cake. Scrooge and I each had an African Amber and a bottle of water to save for later. They serve the food in very cute Chinese take out containers and have a nice selection of condiments over in the seating area. Our table: It was a warm day and there were very few umbrellas so we were pretty toasty sitting there! ![]() ![]() ![]() And our food. These are somewhat pathetic, I wasn't thinking to take pictures but hey, you can see the carton! ![]() ![]() I did not get a picture of Tinks Honey Chicken. It was a crispy chicken and she loved it. Chinese Nuggets if you ask me (definitely finger food) but she was quite pleased. The African Amber was, hands down, our favorite beer of the trip. We don't know what it really was brand wise, but it was good. So good that Scrooge had it again at dinner, at Boma, later that night. Reminded us of a local African Amber we have quite often, Mac-n-Jacks but I've never seen it outside of the area so I doubt that is what it was. We would absolutely eat here again. It was a refreshing change of foods, a pretty (if toasty) setting and although the wait was long, the service was very very pleasant. One note...We did NOT care for the mango pie. At all. It was more of a mango custard tart and it was...ugh. Goofy was SO bummed, he'd been excited to try it. He ate his egg roll so fast I didn't get a picture but it was quite large and he said it was tasty. Later in the day, for our afternoon snack, both Scrooge and I got one. Make that TWO. The kids meal is one pork egg roll. The side, or snack credit order, is TWO. They were huge. And yummy! Crispy and flaky on the outside, full of moist & juicy pork and veggies on the inside. My favorite savory snack credit of the week, hands down. Scrooges too. It will be a must have snack for us, at AK, from now on! Next...Kali? Or Safari? What to do?

The sweet lemon fritters (from Capri lol), won. I had a very hard time getting my yeast to dissolve, had to toss out the first one and then start again. That one never got "foamy" like it was supposed to, so I made another one. That one didn't get foamy either but I was out of yeast, so I used it. Worried about it already I was amazed at how HARD it was to stir the dough. I probably should have made it in my kitchen aid mixer with the paddle but don't do bread things enough to have thought of that ahead of time. 10 minutes later I thought that 1. my arms would fall off 2. no way it was mixed well enough 3. it might be doomed. I don't know why the recipe called for it to be stirred instead of kneaded. Kneading would have been a million times easier. I seriously thought it was NOT going to rise. But it did. OMG they were GOOD! but a lot of work. little balls of lemon deliciousness (lemon, vanilla, brandy and golden raisins dusted with sugar) they were gone. inhaled. gone. The salad was not nearly as popular! Probably b.c we were late due to my frantic fritter frying! It turned out well though. So I'd love to eat them again but... not sure I'm up for making them myself. I think I'm just used to winging it in the kitchen and following random recipes and things generally go the way they are supposed to, easily. This was unexpectedly stressful!

exactly! They were devine but I have a hard enough time with waiting for pie crust dough to chill. The stress of will it rise, or not, killed me!

I do have one regret. They had a cocktail called a "yak attack" at the outdoor bar. I didn't get it wanting to try the amber and hoping they'd have it at Boma that night. It's the drink that got away.... I don't remember what was in it but it sounded so good and I'd spent the week searching for that perfect cocktail (which is funny as vacation is the only time I really do cocktails...unless you count the lemon drops at the gourmet club party yesterday lol). I remain convinced that the Yak Attack would have been IT.Oh well.

There's not a lot in the kitchen that I ask for help with, but I beg my DH to come help me when I have a recipe like that. He also grew up working in his father's restaurant and is an expert at dough. They made pizzas, etc, so he's really good at kneading.

The lemon fritters and mediteranean potato salad sound delish. The Yaki & Yeti found sounds (I can't see it) really good as well. I really want to eat Y&Y TS for lunch during our next trip, but can't get it. It's totally booked. I guess I can always use a snack credit for egg rolls....good to know! I love creative ways to use up those snack credits.
Enjoyed your lastest update. I can just picture the crowds. I hope you get to ride some rides. How awful to have to wait 45 minutes for a bus. This happened to my DS waiting for a bus from AK to Epcot. I guess their GPS tracking system must get really screwed up from time to time!
