FYI, I am not sure if it is same for UK tickets, but when I purchase Canadian Resident tickets, before my tickets are used for the first time, I have to visit Guest services to 'Activate' them by showing my Canadian driver's license or some sort of proof.

I think for us, the key is to look at the menu!! (And price, too!) I am also quite picky and so are my family. We were happy at WDW as I often find TS pretty good. But we havent done buffets nor character dining for a while. We will see how it goes. :)
