Just did this in January 2017. We had 5 day tickets from LMTC. Used the tickets and on the 4th day, upgraded to AP's. We were credited the full amount when we upgraded.

The answer is no. I tried doing this a year or two ago. Disney would not let me buy a F&W gift card with a regular Disney gift card. So, I said charge it to my room and I figured I would just apply the Disney gift card to my room charges. Nope, can't do that either.

They were not on the menu when I was there in late May.

We were there the last week of May. The mushroom filet was on the menu, but it was served with risotto with peas. No mushrooms in the risotto, only on the steak.
