15?! Wow - I hope that can be us some day! That's awesome. The sunset would be amazing! But we will be sitting with the girls for their dinner and then dine at Palo after. I'm guessing that it will still be amazing right?Absolutely a "Must"... The 1st night at Palo or Remy is our favorite. We feel it's a perfect way to start our cruise (15 so far). Nice thing about Palo, on the 1st evening after leaving PC with an early reservation you should able to dine while watching the sunset.....

Oh, and when they ask you which sauce you want with the souffle, the correct answer is 'both'!
Wrong. Your server will be much more involved with your diner at Palo than at the MDR. You can discuss your likes/dislikes and will advise you on courses and pairing wine. He/she will ask you if you would like the chocolate soufle when ordering your entree as the shoufle will take more than half an hour in the oven to prepare. Just say yes, try it and enjoy. If you don't like it, just order something else.So it sounds like it's pretty customizable to your likes and the servers will kind of walk you through it (just like the MDRs). Right?

So portions are good sizes (for multiple courses that is - always a question from hubby). Sounds like the Souffle is a must try. We are planning on sitting with our daughters in the MDR for main seating and then they'll go to the club while we go to dinner. 7:00pm res should be okay right? Thanks so much guys!

Palo is a table service "all you enjoy to eat", so don't be ashamed to order several dishes if you wish to try.
Most important: don't rush it. You can take as long as you wish and if you do you will have a great experience. Have fun with your server and with each other. Enjoy the view, the food, the wine and the relaxation. 2 hours is a nice guideline. Can take a little longer or shorter if you wish.
No need to bring cash, as you will be presented a slip to add tip to your stateroom account.
